Made of 100% natural flax linen, the LorzonĀ® Baker’s Couche is specifically crafted for achieving French baguettes. It absorbs the dough’s excess moisture, maintains its shape, and promotes a crusty exterior, an essential tool for the final proofing stage.

Baker’s Couche Tips & Care

Step 1. Lightly dust the couche with flour to prevent the dough from sticking.
* Avoid dusting with excessive flour, which may affect the appearance and texture of your crust.

Step 2. Position the dough that requires proofing onto the couche. Fold the couche on two sides of the dough to create supportive structures.
* Excess couche may be folded back over to cover the dough.

Couche Care

  1. After each use, simply shake off any crumbs or flour.
  2. Hang in a well-ventilated area for drying. Avoid high heat or direct sunlight to prevent damage.
  3. After drying, fold it neatly and store it in a cool, dry area to prevent mold growth.

NOTE: For the distinctive crust of a baguette, it is recommended to refrain from washing your couche. However, if it becomes soiled with substances other than flour, clean it using only tap water and avoid using detergent.
